Breakfast Treat Recipes

Honey (and blueberry)  Baked Banana
Preheat oven to 400 degrees F.
Spray cookie sheet pan with cooking spray
Place banana (unpeeled) on the tray and place into the oven
*Note - The peel is supposed to turn dark brown or black*
Bake for about 10 - 15 min.
Cut half of the peel off, so that the banana is still laying on the other half
Let the banana cool and drizzle some honey (I do agave honey) on top
You can also add some brown sugar, cinnamon, chocolate drizzle
but remember, you don't want this to be too unhealthy, but if you want to really make it a special treat,
"Go for it!"

Now if you decide to go Blueberry on me
 well then that's a whole different story!
Here ye', here ye,' thee baked banana just got berry-fied!

To be worthy of even attempting to make this sweet fruity banana, you have to have the right ingredients.
Now it's the same ingredients from above except there is the blueberry sauce.
Preheat oven to 400 degrees F.
Spray cookie sheet pan with cooking spray
Place banana (unpeeled) on the tray and place into the oven

Bake for about 10 - 15 min. ( shown below)
 Open up the half of the peel and cut into slices and one slice down the middle.
 Making the Sauce
Take a handful of blueberries (or any type of berry) and smash (I had to use a fork/my hands but you can use some other type of tool) the blueberries until all of the blueberries have been smashed.
Take a small pan and put it on very low heat.
Heat up the smashed berries and occasionally stir while smashing up the berries even more.
(the sauce should come from the berries naturally just by stirring it, but you should keep smashing it to have less skin)
When warm put into a small bowl and mix with some honey (shown below)
Then simply pour the berry sauce over the banana
 Carefully hold the banana on a slant to release all of the extra banana and berry juices
 Voila it's all done and of course
being the healthy 'vegetable lady' I am,
I just had to add some baked slices of sweet potato with salt.
Now enjoy, usually eaten for a healthy lunch or snack.
